Ingredients
- ½ cup unsalted butter, room temperature (115 grams)
- ½ cup granulated sugar (100 grams)
- ¼ cup packed light brown sugar (50 grams)
- 1 large egg, room temperature (50 grams)
- 2 teaspoons vanilla extract
- 1 ⅔ cups all-purpose flour (210 grams)
- ½ teaspoon baking powder
- 2 teaspoons ground cinnamon
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 3 tablespoons unsalted butter, melted
- ⅓ cup all-purpose flour (45 grams)
- 3 tablespoons packed light brown sugar
- Pinch of salt
- 1 cup powdered sugar (120 grams)
- 3 tablespoons milk of choice (I used Lactaid)
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Make the cookies. Preheat the oven to 350°F (175°C) and line two sheet pans with parchment paper.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla, and mix until combined.
- Add the flour, baking powder, baking soda, cinnamon, and salt, and mix just until no dry streaks remain and set aside the cookie dough.
- Make the streusel. Combine the flour, brown sugar, salt, and melted butter in a small bowl. Mix gently with a fork until it resembles wet sand and clumps together.
- Scoop the Dough. Scoop the cookie dough on to prepared pans. Flatten slightly and add about 1 teaspoon of streusel on top of each.
- Bake. Bake for 6 minutes, remove from the oven, sprinkle remaining streusel, then bake another 6–7 minutes until edges are golden.
- Make the icing. While the cookies bake, combine the powdered sugar, milk, vanilla, and salt in a small bowl. Drizzle over cooled cookies and allow to set.
Notes
- Streusel Topping: Divide the streusel in half. Some goes under the cookie, some on top. This gives a crunchy top while keeping the base soft and tender.
- Cookie Size: Use 2 tablespoon cookie scoop.
- Baking Time: Watch the edges for light golden color and soft centers. Even if they look slightly underbaked, they will firm up as they cool.
- Cooling Before Icing: Allow cookies to cool completely before drizzling icing. Warm cookies will melt the icing, preventing it from setting properly.
