Use a very ripe banana with lots of brown spots. This adds sweetness and moisture and makes a big difference in flavor
Let the melted butter cool slightly before mixing so it does not scramble the egg

How to Store your Mini Banana Bread
Room temperature storage works if you plan to eat it within one day. Let the bread cool completely then wrap tightly in plastic wrap or store in an airtight container
For longer storage place the cooled bread in plastic wrap then into a freezer safe bag. Freeze for up to one month. Thaw at room temperature or warm gently before serving

Ingredients
- 1 very ripe banana
- 1 large egg
- 3 tablespoons unsalted butter melted and slightly cooled (or canola oil)
- ¼ cup granulated sugar
- ¼ cup dark brown sugar
- 1 teaspoon vanilla extract
- ¾ cup all purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons milk dairy or non dairy
- 2 tablespoons chocolate chips
- Flakey salt to top
Instructions
- Prepare the Pan: Preheat oven to 350°F. Grease a small loaf pan or a 6 inch round cake pan and set aside
- Mash the Banana: In a medium bowl mash the banana until mostly smooth
- Mix the Wet Ingredients: Add the egg melted butter granulated sugar brown sugar and vanilla. Stir until fully combined
- Add the Dry Ingredients: Sprinkle in the flour baking soda baking powder and salt. Gently fold together
- Finish the Batter: Add milk and stir just until combined. Fold in walnuts and chocolate chips if using
- Bake: Pour batter into prepared pan and bake for 25- 30 minutes or until a toothpick inserted comes out with a few moist crumbs. Sprinkle with flakey salt.
Notes
- Pan Size Matters: A small loaf pan or 6 inch round pan ensures even baking. Larger pans will cause the bread to spread too thin and dry out
- Do Not Skip Milk: Even a small amount of milk keeps the crumb tender and prevents a dense texture
- Know When to Pull It: If the top springs back lightly and the edges pull away slightly the bread is ready even if the center looks soft
