Ingredients
- ¼ cup unsalted butter, melted
- ⅓ cup light brown sugar
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
- ⅔ cup all purpose flour
- 1 ¾ cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 2 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup unsalted butter, softened to room temperature
- ½ cup packed light or dark brown sugar
- ¼ cup granulated sugar
- 2 large eggs, at room temperature
- ½ cup yogurt or sour cream, at room temperature
- 2 teaspoon vanilla extract
- ¼ cup milk (2% or whole milk), at room temperature
- 1 ½ cups peeled & chopped apples
- 1 cup powdered sugar
- 3 tablespoons milk of choice (I used whole milk)
- ½ teaspoon vanilla extract
- Pinch of salt
Instructions
- Make the Crumb Topping: Mix the brown sugar, granulated sugar, and cinnamon together in a medium bowl. Stir in melted butter, then gently mix in the flour using a fork. Keep the mixture as large crumbles and do not over-mix. Set aside.
- Prepare the Muffin Batter: Whisk together the flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
- Cream Butter and Sugars: Using a handheld or stand mixer, beat the butter and sugars on high speed until smooth and creamy, about 3 minutes. Scrape down the sides as needed.
- Add Wet Ingredients: Beat in the eggs, yogurt, and vanilla extract on medium speed for 1 minute, then increase to high until mostly combined. Scrape the bowl as necessary.
- Combine Dry and Wet Ingredients: With the mixer on low, gradually add the flour mixture and milk. Beat until no flour pockets remain. Fold in the apples.
- Fill Muffin Pan: Spoon batter into prepared cups, filling to the top. Sprinkle crumb topping on each muffin and gently press to adhere.
- Bake Muffins: Bake at 425°F for 5 minutes, then reduce oven to 350°F and bake 15–18 minutes more, until a toothpick inserted comes out clean.
- Make the Icing (Optional): Whisk together all icing ingredients and drizzle over cooled muffins.
