For the Chocolate Cookie Base

  • ½ cup butter, softened (113 g)

  • 1 cup granulated sugar (200 g)

  • 1 large egg, room temperature

  • 1 egg yolk, room temperature

  • 2 teaspoons pure vanilla extract

  • 1 ½ cups all-purpose flour, spooned and leveled (190 g)

  • ½ cup Dutch-processed cocoa powder (40 g)

  • ½ teaspoon baking soda

For the Peanut Butter Layer

  • 6 tablespoons butter (salted or unsalted)

  • 6 ounces cream cheese, softened

  • 3 ½ cups powdered sugar

  • 1 teaspoon vanilla extract

  • 1 tablespoon heavy cream (or more if needed)

  • 2 tablespoons Oreo cookie crumbs, for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

  2. Cream the butter and sugar together in a large mixing bowl until light and fluffy, about 2–3 minutes. Add the egg, egg yolk, vanilla, and milk, and mix until combined.

  3. In a separate bowl, whisk together flour, cocoa powder, and baking soda. Gradually add to the wet ingredients and mix until just combined. Fold in Oreo crumbs.

  4. Scoop cookie dough into 2-tablespoon-sized balls and place on baking sheets spaced 2 inches apart.

  5. Bake for 10–12 minutes, or until edges are set but centers still look soft. Let cool on the pan for 5 minutes before transferring to a wire rack.

  6. Make the frosting: Beat butter and cream cheese until smooth and fluffy. Add powdered sugar, vanilla, and cream. Beat on high until smooth and fluffy, adding more cream if needed for spreadability.

  7. Frost each cooled cookie and sprinkle generously with Oreo cookie crumbs. Chill if desired to set the frosting.

Notes:

  1. For the cleanest frosting application, chill your cookies for 10–15 minutes before piping or spreading on the frosting. This helps the frosting stay put and not melt into the cookie.

  2. Don’t overbake! The cookies should look slightly underbaked in the center when you take them out. They’ll continue to set as they cool, giving you that perfect soft, fudgy texture.
