Our Tips for Muddy Buddy Cookies

Do not overbake the cookies. They should look slightly underdone in the center when you remove them from the oven. They will continue baking as they cool.

Allow the cookies to cool completely before adding the melted chocolate. Warm cookies will cause the chocolate to slide right off.

Press the Muddy Buddies onto the chocolate while it is still wet so they stick securely without falling off later.

If using homemade Muddy Buddies, make sure they are completely cool before topping the cookies so the powdered sugar coating stays crisp.

How to Store Muddy Buddy Cookies

Refrigerator: Place the cookies in a single layer or between sheets of parchment paper inside an airtight container. Store in the refrigerator for up to 1 week. Let them come to room temperature before serving for the best texture.

Freezer: Freeze the fully assembled cookies in a single layer until solid, then transfer them to a freezer safe airtight container or freezer bag with parchment paper between layers. Freeze for up to 3 months. Thaw overnight in the refrigerator or at room temperature for about 1 hour.

Ingredients

For the Cookies
  • ½ cup peanut butter
  • ½ cup butter, softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 egg, at room temperature
  • ½ teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt
  • ⅔ cup milk chocolate chips
  • 2 teaspoons vegetable or canola oil
  • Muddy Buddies (homemade or store-bought)

Instructions

  1. Prepare the Oven: Preheat the oven to 350°F (177°C). Line two baking sheets with parchment paper.
  2. Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, peanut butter, brown sugar, and granulated sugar until smooth and creamy, about 2 to 3 minutes.
  3. Add the Wet Ingredients: Mix in the egg and vanilla extract until fully combined.
  4. Combine the Dry Ingredients: In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt.
  5. Make the Dough: Gradually add the dry ingredients to the wet ingredients, mixing just until no dry streaks remain. Do not overmix.
  6. Chill the Dough: Cover and refrigerate the dough for 30 minutes. This helps prevent spreading and creates thicker cookies.
  7. Scoop the Dough: Scoop about 2 tablespoons of dough for each cookie and place them about 2 inches apart on the prepared baking sheets.
  8. Bake: Bake for 9 to 11 minutes, or until the edges are lightly golden and the centers still look slightly underbaked.
  9. Cool Completely: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Melt the Chocolate: Combine the milk chocolate chips and vegetable oil in a microwave safe bowl. Heat in 20 second intervals, stirring between each, until smooth.
  11. Decorate the Cookies: Spoon or spread a layer of melted chocolate over the top of each cooled cookie.
  12. Add the Muddy Buddies: Immediately press several Muddy Buddies into the melted chocolate. Allow the chocolate to set before serving.

Notes

  • Use Creamy Peanut Butter: Regular creamy peanut butter like Jif or Skippy provides the most reliable texture. Natural peanut butter tends to separate and can make the cookies dry or crumbly.
  • Chilling Is Worth It: Even though it is tempting to skip, chilling the dough helps control spreading and creates thicker cookies that can support the chocolate topping and Muddy Buddies.
  • Let the Chocolate Set Naturally: Allow the chocolate to harden at room temperature whenever possible. Refrigerating immediately can sometimes create condensation that softens the powdered sugar coating on the Muddy Buddies.
